All of Cascina Oschiena's Products are exclusively cultivated by us on our family farm with precision, love and expertise.
Our rice and our emmer are grown in an Ecological Biodiversity Protected Area - Natura 2000 and are ‘Friend of the Earth’ certified. This certification rewards companies that operate in accordance with the practices of sustainable agriculture and farming, implementing social responsibilities.
Our varieties of rice are: Arborio Classic Rice, Carnaroli Classic Rice, Carnaroli Classic Wholegrain Rice, Apollo Aromatic long-grain Rice, Selenio round-type Rice, Ebano Wholegrain Rice and Ermes Wholegrain Rice.
We at Cascina Oschiena are among the few farmers in Italy that still grow ancient and local varieties, maintain their historical uniqueness and keep their quality alive. Classic is the Certification that guarantees authenticity, purity and traceability, distinguishing the true ancient varieties from the modern similar varieties created for industrial agriculture in order to maximize production.
These modern varieties can be sold, absurdly enough, with the name of the historical reference variety. The Classic Certification represents therefore a concrete tool both for farmers that can enhance the uniqueness of the historical varieties and for consumers that can make informed choices, knowing that the rice they are buying is the authentic variety with all its unique cooking properties, peculiarities and history.
Classic is certified by Ente Nazionale Risi, the Italian Public Institution supervised by the Italian Ministry of Agriculture which aims to protect the national rice production.

In 2016 we began to grow also ancient Emmer (Triticum Dicoccum).
To date we have planted over 5000 trees and shrubs. In 2019 we recreated 60 acres of Natural Wetlands by converting one fourth of the farmland from rice cultivation to Nature Reserve for the survival and reproduction of amphibians, bees, dragonflies, butterflies and the nesting of different species of migratory birds. The Natural Wetlands Project grants water purification and makes a unique and rich cradle of biological diversity. The Reserve is home to countless natural antagonists for pest control which helps guarantee a healthy top-quality rice. It's much better to live in synergy with Nature instead of trying to compete with it. The real quality of food is represented not only by the quality on the plate but it consists also in what came first, how it is produced and its environmental impact. This is why Cascina Oschiena is also an ethical choice.
Carnaroli is an Italian ancient variety with a tapered and pearled grain renowned for its excellent cooking properties and ideal for the finest preparation of Risottos.
Carnaroli grains have the perfect cooking resistance and ability to blend with any ingredient. Why is ours called Carnaroli "Classic" Rice?
Classic is the Certification that guarantees authenticity and purity and distinguishes this true ancient variety from the Carnaroli-type modern varieties created for industrial agriculture.
Cooking time 14-16 minutes.
The difference between white rice and brown rice is that the latter is only husked and not polished.
Husking consists of removing the husk, i.e. the light outer layer which surrounds every single grain and which keeps them attached to the head; while the production of white rice requires that the inner film that lines the grain, its peripheral layers and the germ be removed.
These parts of the grain, which are not eliminated in the production of brown rice, particularly the germ, contain high quantities of protein, vitamins, minerals and fibre. Brown rice is therefore easy to digest, ideal for a healthy and balanced diet, and is recommended for all those ailments whose cause is linked to a lack of fibre in one’s diet.
One should also not forget its optimum level of potassium with respect to sodium.
The fact that brown rice maintains its peripheral layers and the germ means that its cooking time is significantly greater than that of white rice.

Arborio takes its name from a small town nearby Vercelli.
It is an Italian ancient variety with a big and pearled grain, renowned for its excellent cooking properties and ideal for the finest preparation of Risottos.

Long grain aromatic rice, Apollo is the Italian alternative to Jasmine Rice.
Famous for its natural fragrant floral aroma and excellent cooking properties, it is ideal as a side to vegetable, meat and fish dishes, whether spicy or delicate.
It is even worth trying on its own, with a little extra-virgin olive oil.
Highly digestible, Apollo is perfect in a healthy and low-fat diet.
Fast in cooking and easy to prepare, Apollo combines versatility with taste in fine gourmet dishes.

Selenio round type rice is a historical variety with small and round, crystalline grains.
